Modak / Sweet Kozhukattai:
Modak is the sweet that Lord Ganesha likes the most. Begin this with the prep up for the sweet filling with grated coconut and jaggery.
Add the mixture to ghee and cook until the jaggery has melted and is well combined with coconut.
For the outer shell, mix rice flour with hot water and a pinch of salt to make a soft dough. Form small cups out of the dough and
fill them with the coconut mixture, then gently press them into Modak form. After about 10 minutes of steaming, the Modak's are ready to be served.
Kara Kozhukattai:
Like Modak, the sweet Kozhukattai, Kara Kozhukattai can also be considered an innovative offering.
This spicy one is as popular as the ‘plain’ version and gives different taste to the festive offerings.
Kara Kozhukattai is made as dumplings with ingredients such as soaked chana dal, chopped green chilies, grated coconut and curry leaves.
Heat some oil in a pan, and sauté the mustard seeds, the urad dal, the chana dal, coconut, and curry leaves. Add water and boil it for around 10 min.
Add the rice flour to it and stir well to avoid any lumps. Once its cooked, keep it aside to cool down.
Then press it with your palms and your tasty Kara Kozhukattai is ready.
Puran Poli:
Sweet lentil stuffed flatbread is popular during celebrations. Soak chana dal and prepare a coarse mixture of it
along with jaggery and cardamom powder for stuffing purposes. For the dough, mix wheat flour with a little oil and water and then knead it.
Divide the small portions of dough and scoop the sweet mixture into the centre then shape them gently. Technique:
fry on a hot griddle with a little ghee until nicely brown on both sides.
Another simple sweet to prepare is Besan Ladoo which is made of roasted gram flour, ghee, and powdered sugar.
Fry the gram flour in ghee for five to seven minutes on low flame until the gram flour slightly browns and emits a nice aroma.
Now add the powdered sugar and cardamom powder and knead the mixture to make small round Ladoo's.
These candy-like treats are ideal for serving during the festival.
