Vinayagar Chaturthi is one such festival when people come together singing and dancing making delicious dishes and prayers.

Among several such traditional sweets, this Kozhukattai has a unique place in this festival. Whether it is a first-time experiment with

this festive sweet or a routine cook preparation, homemade festivity of Kozhukattai has a definite sense of accomplishment.

Ingredients:

1 cup rice flour
1 cup water
A pinch of salt
1 tsp oil

For the Filling:

1 cup grated coconut
1 cup jaggery
1 tsp cardamom powder

Prepare the Dough: To begin preparing the dish first heat water in a saucepan. Then add a pinch of salt and a teaspoon of oil in it.

When the water is boiling, reduce the heat and then gradually add the rice flour to it as you stir the mixture so that it does not form lumps.

After it starts to thicken to a dough like consistency it is then ready to come off the flame and cool down. This dough should be taken to a

smooth consistency using the hands through kneading.

Prepare the Filling: In another pan, boiling water is added to jaggery which dissolves it completely and makes it soft and pliable.

Continue preparing this dish by stirring the grated coconut then put it back into heat. Add the cardamom powder in it and

stir the mixture properly until it becomes thick. Allow it to cool.

Shape the Kozhukattai: Oiling your palm with a little oil takes a small portion of the dough. Pat it flat and make it about the size of a small disc

and scoop one spoonful of coconut-jaggery filling and place it in the centre. Pinch the seam shut and fold it carefully, to give it a little dumpling like look.

Steam the Kozhukattai:  Put the Kozhukattai in a steamer and steam for about 10 – 15 minutes or until the skin becomes clear, slightly transparent.

It is time to take your delicious Kozhukattai and offer it to Lord Ganesha – as well as to serve it to your family.
